Carrots and Beets, How to Preserve the Harvest, September 5. I have been using this method of storing beets and carrots for five years now. 1. Trim leaves and roots. 2. Wash thoroughly. 3. Dry well (preferably not in the hot sun). 4. Place in a large plastic container. 5. Fill it with dry river sand. 6. Store in a cool, dry place.
